"What's nice about turkey is that it's a widely recognized food and it's very inexpensive. When you buy pre-portioned cuts of turkey, like the ones I use for Turkey Tenderloins, the food cost percentage is still very low. The great thing about turkey tenderloins specifically is their versatility. You can dress them up with turkey bacon, add a nice port wine sauce to it, as I do in my Bacon Wrapped Turkey Tenderloins with Port Sauce recipe, and serve it with a little bit of a flare (whether it's the mushroom pasta, a mashed Yukon gold potato or a sweet potato) and it's still a very low cost item. However, your restaurant will see high gains from this recipe simply because it offers an upscale presentation. You can dress up the plate and sell it for a little more money than you would if you served it in the traditional fashion with gravy, mashed potatoes and cranberry sauce. "
